No question that it is the speakers giveing you that extra high bite. These amps are very fickle when it comes to speakers. The G12T75 are shrill as well as some of the V30 types eg: Govs & Vintage 30's tend to be a bit bright. Get some Small & Big Blocks & call it a day. They are the bomb!
